Muffins

Here are a few of my favourite recipes. As you may know I love baking and with the help of the AIS cookbooks I am able to make healthy cakes and desserts that don’t have to be for special occasions only. I will keep adding to this page but here are a few recipes that I have been cooking a bit recently.

LEMON DELICIOUS

3 Eggs Separated
3 tsp lemon zest
1/2 cup castor sugar
30g margarine melted
1 cup skim milk
1/3 cup lemon juice
1/2 cup self raising flour
1/2 caster sugar, extra
Light Vanilla Ice cream

– Preheat oven to 180 degrees C. Lightly grease 6 1 cup dishes
– Beat egg yolks, zest and sugar in a large bowl with electric mixer until thick and creamy
– Stir in margarine, milk, juice and sifted flour
– Beat egg whites until soft peaks form. Add extra sugar gradually and beat until dissolved.
– Fold gently into lemon mixture in 2 batches
– Pour into dishes. Place in baking dish with enough hot water to come half way up the side of the dishes.
– Bake for 20-25 minutes or until pudding is just set
– Serve with Light Vanilla ice cream

Carrot and Sultana Muffins

1 1/2 cups self raising flour
1 cup wholemeal self raising flour
2 teaspoons mixed spice
3/4 cup brown sugar
3/4 cup brown sugar
1 1/2 cups grated carrot
2 tablespoons vegetable oil
1 1/4 cups skim milk
1 egg lightly beaten
1 teaspoon vanilla essence
1 tablespoon golden syrup

– Preheat oven to 180 degrees. Grease 12 hole muffin tray
– Sift flour and mixed spice into a bowl
– Stir in brown sugar, sultanas and carrot
– Whisk margarine, milk, egg, vanilla and golden syrup then add to flour mixture
– Stir gently until just combined
– Spoon into pan and bake for 20 minutes
